Onion Eyes

At every single one of my cooking classes, there seems to always be one poor soul who cuts into an especially warm onion, and spends a good 10 minutes trying to chop their onion through tears.  For some reason, this always warms my heart.  For almost all of the students, this is the very first time that they have ever cut an onion, and my hope is that they gain a greater appreciation for all of the onion cutters that have gone before them.
